Back To Cooking

We have been so busy. Plus I keep forgetting to take photos. Ooops. On the positive note we have finished the loft area and furniture is coming on Wednesday afternoon. I will post photos for sure. We want to paint but we are going to re-paint the house after the new year. I also got the backyard more complete. I potted some plants for a section of our planter and I have gotten an area ready for more veggies next year. I am so glad this house came with most of it set up. The drip irrigation on timers makes this all solo very easy. And it helps to have a helper, Braylon LOVES to garden. We go to lowes and Home Depot and he helps to pick out the flowers. Then he helps plant them. More then anything he loves picking all of thr veggies, ripe or not. That is where we have been. 

Anyway, back to the post. Last night I made dinner. Like most families, I imagine, we get stuck in dinner ruts. We essentially rotate between seven or so easy, usually healthy, dinners. I want to mix it up and add some new ones i. Plus I am trying to help us eat even better. Last night I made shredded chicken and bean creamy green chicken enchiladas. They are from my favorite site skinnytaste.com. Everts thing is healthy and really good tasting. These also came out very spicy. And Colin would like me to make them again! here is what they looked like....

Tonight, it  is zucchini boats filled with turkey sausage. I hope they turn out well too. It is another skinnytaste creation.

PS yes I am in shock that my baby turns two next Sunday! We will be going to the fire station to celebrate, as Colin has to work.
